From soups and salads to decadent desserts and everything in between Jennifer Martin is serving up some great recipes at her blog “Imitation by Design.”

Imitation by Design” has a mix of healthy, Weight Watchers friendly recipes as well as delicious indulgences.  You’ll find plenty of desserts, appetizers and dishes for potlucks and parties as well as simple pizza nights at home with the family.  She says, “I don’t put anything on my blog that my hubby and I don’t truly enjoy so you can expect the best.:  But she does point out that the 2 year old’s vote doesn’t count yet.
Jennifer says she is currently blessed to be a stay at home mom to her son, but she also helps her husband in their family retail business.  She really enjoys being at home; taking care of her husband and son, cooking, crafting, photography and decorating their home.  Cooking is one of her passions and a way for her to express her love and care for others.  Jennifer said, “I believe that as Christian women, we must use our passions/talents in life to help others and bring glory to God.  We don’t want to be caught burying them in the sand when the Master comes.”
 “Imitation by Design” was a blog that was started over 2 years ago when Jennifer became a stay at home mom to her delightfully rambunctious son.  She says, “It gives me a creative outlet, but more importantly allows me to keep track of the recipes that I have tried and loved so that the next time I make them, I’ll know exactly what I did.” Jennifer, like many other folks who love to cook, has a hard time making a recipe “as written” so having the blog allows her to have a recording of what she has done which is vital to future success.  Blogging has also given her the ability to easily share recipes with others. Her blog title is taken from Ephesians 5:1 because of 2 reasons. She is living her life with the goal of being an imitator of God, and she takes inspiration for her recipes from variations of similar recipes.

Guilt-free Peanut Butter & Chocolate Pie

After weeks of deliciously sinful holiday bingeing, we are all looking for ways to cut back on calories and trim our waistlines without giving up all of the things we love.  But seriously, it’s hard to diet when you feel like all you are eating is diet food.  Am I the only one with this issue? Once again Pinterest comes to my rescue with it’s plethora of Weight Watchers friendly recipes and this easy frozen peanut butter and chocolate pie!

A healthy dessert with peanut butter, cream cheese and chocolate sounds to good to be true, you say?  Actually, this sweet, guilt-free peanut butter pie comes in at under 250 calories for 1/10 of the pie!   Even if you’re a hardcore dessert-a-holic like me, I think you’ll find that one piece of this rich, peanut buttery, chocolatey goodness to be just right.  Because it is frozen, you eat slowly, savoring each bite, and allowing you to eat less while feeling completely satisfied.

This dessert is so simple to make and leaves itself open for all kinds of healthy variations, like strawberry & chocolate, lemon and blueberry or coconut!  You are only limited by your imagination.
